I’m trying to omit excess flour and sugar from my diet, so why I make whole wheat blueberry waffles with real maple syrup, I can’t begin to tell you.
It’s a sickness.
I justify it by the fact that we have friends in Canada who send us real maple syrup by the jars-full. And when organic blueberries are plump and the price is right, I purchase those. The whole wheat factor plops these over in the category of “the best kind of sugar/organic blueberries/whole wheat” waffles, so I pull out the waffle maker, and there you go.
I’m a bit delusional.
Here’s the wonderful, easy recipe:
WHOLE WHEAT BLUEBERRY WAFFLES
2 C. whole wheat flour
4 t. baking powder
1 T. brown sugar
1 t. extract – I have used vanilla, almond, maple. Whatever flavor you like.
2 eggs
* 1 and 3/4 milk (we only buy skim, so this further fuels my delusion.)
Pint of rinsed and dried blueberries
DIRECTIONS:
Whisk the ingredients, except blueberries, together. * With the milk, start off with 1 and 1/2 cups. Add the rest as needed. Depending on the type milk you use, you might not need the full 1 and 3/4. When batter is well mixed and smooth, gently fold in as many blueberries as you’d like.
Brush or spray waffle iron with vegetable oil. When iron is hot, slowly pour batter onto the squares, leaving space around the edges. Batter will spread once the lid is closed. Most waffle irons have a light that will come on when the waffle is ready. If yours does not, lift the lid just a tad after a minute to check for doneness and color. The waffle will easily lift away from the iron when it’s done. Re-oil the iron between waffles to ensure no sticking and good clean up.

I made these recently, and while one waffle was cooking, the waffle iron began to pop, and then spark. I quickly unplugged the thing.
The hubs looked at the bottom of it and determined my waffle iron was toast. It had prepared too many waffles here at the Ballpark and was ready to ready to retire to waffle iron heaven. I made pancakes with the rest of the batter, but they were not the same.
Farewell, worn out, hard-working waffle iron. Thanks for the memories.
OK, moving on. I’ll be scouting deals at Walmart soon for a new addition to the kitchen. 🙂
